Bulgur-Stuffed Cabbage Rolls
Six servings. Cooking time: 45 minutes.
Ingredients
- ½ kilogram of cabbage
- 1 cup of medium coarse bulgur
- 3 onions
- 1 heaped tablespoon of tomato paste
- 1 heaped tablespoon of pepper paste
- ½ bunch of parsley
- ½ bunch of mint
- 1 tablespoon sumac sour sauce (or 1 teaspoon sumac)
- 2 cloves of garlic
- 6-7 grape leaves
- Olive oil
- Yoghurt
- 1 teaspoon cumin, red pepper powder and salt
Preparation
1. Dice the onions. Rub them with salt to remove the water, then rinse and drain.
2. Separate the cabbage leaves and prepare them for rolling.
3. Blanch the cabbage leaves in boiling water for about 1 minute.
4. Rinse the bulgur and knead it with the tomato and pepper pastes.
5. Add the sumac sour sauce and mix well. Add the onion and mix again.
6. Add the greens, olive oil, cumin and salt and continue kneading.
7. Wrap the cabbage leaves with the prepared stuffing and place them in a pot. Drizzle olive oil over the top, then place a plate on top to weigh them down. Add enough hot water to cover the rolls and cook over medium heat for 30 minutes.
8. Mix the remaining stuffing and the chopped grape leaves in another pan. Add enough hot water to cover and cook over low heat until the water is absorbed. Leave to rest.
9. Crush the garlic cloves and mix it with red pepper powder and olive oil to make a sauce. Pour this sauce over the cabbage rolls when serving. Serve with the bulgur mixed with grape leaves and yoghurt as garnish.
