Turkish Bulgur - Stuffed Patty

Stuffed Patty

8-10 servings. Cooking time: 75 minutes.

Ingredients

  • 2 cups of fine bulgur
  • ¾ cups of semolina
  • 1 cup of flour
  • 3 cups of hot water
  • 1 cup of cold water
  • 1 egg
  • 1 tablespoon of tomato paste
  • 1 tablespoon salt
  • ½ teaspoon of flaked red pepper
  • ½ teaspoon of black pepper
  • Sunflower oil
  • For the filling;
  • 500 gr ground meat
  • 3 onions
  • ¾ cups walnut
  • 2 tablespoons of olive oil
  • 1 teaspoon of tomato paste
  • 5 tablespoons of water
  • Salt, flaked red pepper, black pepper, cumin

Preparation

1. For the filling, put the ground meat into a pot and sauté until it turns grey.

2. Add the diced onions and sauté with olive oil until softened.

3. Add tomato paste and spices and continue sautéing for 3-4 more minutes.

4. Gradually add 5 tablespoons of water. Cook for 3-4 minutes until the water is absorbed. Then, add the walnuts and cook on low heat for about 1 minute. Your filling is ready; let it cool.

5. To prepare the dough, pour hot water over the bulgur, drain after a while, and cover it to let the bulgur swell.

6. Add the egg, flour, semolina, and salt to the bulgur. Gradually add cold water and knead until it reaches a stretchy consistency. Once the dough is ready, add the spices and tomato paste, and continue kneading until well combined.

7. For each stuffed meatball (içli köfte), take a piece of dough about the size of a mandarin, and shape it into a ball with your hands. Make a hole in the centre using your index finger and gently press the sides to enlarge the cavity. Place 1 teaspoon of filling inside, and close the dough by pinching it together. To prevent sticking and to shape the dough easily, wet your hands occasionally.

8. Heat sunflower oil in a pan, and carefully place the stuffed meatballs into the oil one by one. Fry until they turn golden brown.

9. It is recommended to serve with a salad made of finely chopped tomatoes, crushed walnuts, chopped fresh green onions, pomegranate molasses, and olive oil.
