Kısır (Bulgur Salad)
6-8 servings. Cooking time: 20 minutes.
Ingredients
- 1 cup of fine bulgur
- ½ cup of hot water
- 5 leaves of lettuce
- ¼ bunch of parsley
- 3 spring onions
- 1 cucumber
- 1 tablespoon of sumac sour sauce
- 3 sprigs of fresh mint
- ½ cup of olive oil
- 1 tablespoon of pomegranate molasses
- 1 pinch of black pepper, red pepper flakes, cumin and salt
- 1 tablespoon of pepper paste
- 1 teaspoon of tomato paste
- 1 clove of garlic
- 1 small onion
Preparation
1. Soak the bulgur in hot water. Cover and let it sit for 5 minutes.
2. In a small pan, sauté the onion and garlic in 1 tablespoon of olive oil. Add the tomato and pepper pastes, and sauté for 2 minutes more.
3. Pour the sautéed mixture over the soaked bulgur. Add all the spices, pomegranate molasses, sumac sour sauce, and the remaining olive oil, then mix well.
4. Add the finely chopped greens and knead the mixture to combine all the ingredients. If you prefer, you can increase the tanginess with a little lemon juice to suit your taste. After transferring to a serving plate, garnish as desired, such as with olives and small radishes.
